A red beet smoothie with ginger is the ideal and healthy snack for in between. It helps prevent colds and flu, thanks to anti-inflammatory ingredients and provides you with many vitamins and minerals.
If you feel a little hungry in the afternoon, a smoothie is just right. It provides a little power kick until the evening! Smoothies should consist mainly of vegetables. If you use too much fruit, the liquid fruit sugar can stress the liver. Whether you use fresh (raw) beetroot or pre-cooked, you can do as you like.
Ingredients for a Pink Power Smoothie
- 150 g beetroot
- 1 avocado
- 1 handful of blueberries (frozen)
- 1 cm ginger, freshly grated
- 1/2 lemon
- 300 ml orange juice or water
- 1 tablespoon linseed
- 2 – 3 ice cubes
Peel and grate the beetroot. Squeeze lemon juice. Blend beetroot, blueberries, avocado, ginger grated, lemon juice, orange juice/water, linseed and ice cubes in a blender to a creamy smoothie (about two minutes at highest setting).
Smoothies can cover your daily vegetable requirements, even in stressful times. This is ideal for the office, but also for on the road!
